O-M-Gosh!

I have all these things going on to talk about, I’m as busy as a one armed paper hanger – ahhhh!!  Hopefully I can post a thought or two before this weekend!!

Here’s a great recipe we tried recently!  If you like fried chicken and cheese, this is a good one!

Chicken Breasts Elena
Serves 6

6 chicken breast havlves, boned
Salt, pepper, flour, butter
6 large mushrooms, sliced
3 green onions, chopped
6 sliced mozzarella cheese

Pound breasts until thin, sprinkle with salt and pepper and dust with flour.  Saute in butter in skillet over medium heat until golden.  Saute mushrooms and green onions in butter.  Put chicken breasts in baking dish, top with mushroom-onion mixture and place a slice of cheese over each.  Brown under broiler.  Serves 6.

As you can see I went against the grain and put the cheese on and then the mushroom-onion mixture, thankfully the world didn’t come to a screeching halt.  LOL

This was SOOOO good.  Everyone enjoyed it and I love it when that happens!!  I served it with asparagus and garlic smashed potatoes!  The next day I had the chicken for lunch and it was just as good, so make some extra!   Have a great Wednesday everyone!
