The Weekly Waffle

Sunday morning I made Snickerdoodle Waffles and Honey Butter.  I used light butter which probably wasn’t the best idea as it separated and looked weird, but it tasted good.  Even my oldest who doesn’t care for honey said it was.

These waffles have that wonderful combination of almond & cinnamon and with some pecans and the butter, they were delicious.  I ate 1/4 of the waffle and really wanted to eat the rest, but I managed to resist (then later on, I ate an entire plate of pasta salad…ugh).

Snickerdoodle Waffles

Recipe from Lil’ Luna

2 cups flour
1 t. salt
4 t. baking powder
2 T. sugar
2 eggs
1 1/2 c. warm milk
1/3 c. melted butter
1 t. vanilla extract
1 t. almond extract
1 t. cinnamon

Preheat waffle iron.  In a bowl, mix flour, baking powder, salt & sugar.  In another bowl beat eggs, add the milk, the butter and the extracts.  Mix well and add to the dry ingredients.  Add cinnamon to mix and pour into waffle iron and cook according to waffle iron directions.

Honey Butter

2 sticks butter, softened
1/3 c. honey
1 t. vanilla extract
1/2 t. cinnamon
Blend together.  You can serve it at room temperature or from the fridge. 

I think out of the waffles I’ve posted so far, these are my favorites!
