The Weekly Waffle

I’ve been on a waffle kick for a while now and although I already own a small square waffle iron – thanks to my mother, I decided to purchase a Belgian waffle maker.  I just think they make the prettiest waffles!  And since this IS supposedly a Waffle Blog…I felt quite justified in my purchase.  And now I can make prettier, fluffier and more photogenic waffles to share with you!  Goals my friends, goals.

Sadly I must admit, the diet I am on does not allow me to partake in the consumption of said fluffy, pretty, photogenic waffles, but…I can taste them and since both of my daughters are fairly vocal when it comes to food, it’s a sure bet I’ll hear whether they are worth posting!

These, according to my girls and my own small taste test, just happened to be winners (and they did photograph nicely too)!!

Lemon Poppy Seed Waffles with Lemon Curd
This made 5 waffles and the recipe was adapted from Yes to Yolks.

2 large eggs, separated
1 3/4 c. buttermilk
1/3 c. canola oil
3 T. sugar
3 T. lemon curd*
zest of 1 lemon
2 t. vanilla
4 t. poppy seeds
2 c. all purpose flour
4 t. baking powder
1/2 t. salt

*I used jarred Dickinson’s Lemon Curd, which I always keep on hand and regular maple syrup since my kids didn’t seem too jazzed about the original blueberry syrup idea.  (If I had been eating them I would have definitely had to have the blueberry syrup!)

Separate the eggs and reserve the whites. To the yolks, add the buttermilk, oil, sugar, lemon curd, lemon zest, and vanilla and mix well to combine everything. Stir together the poppy seeds, flour, baking powder, and salt in another bowl and then mix into the wet ingredients.

Using a whisk or hand blender, beat the egg whites until fluffy (soft peaks should form when you lift out the beaters/whisk). Gently fold the egg whites into the batter.

Preheat the waffle iron and spray with nonstick cooking spray. Pour mixture onto the waffle iron when hot (amount will depend on your iron). Cook according to manufacturer directions (usually a couple minutes per side). Serve warm topped with additional lemon curd, fresh blueberries, whipped cream, powdered sugar, and syrup.

Next time I make these, I will add blueberries to the waffles themselves and see how that turns out!

  1. I love my Belgian waffle maker and use it often! My daughter just requested rainbow waffles for her birthday sleepover. I can’t wait to make them and check out some of your recipes!

    1. Don’t you love it?!? I’m like a kid with a new toy, lol. I just saw some rainbow waffles on Pinterest a couple days ago and they are definitely on the “to try” list! I’d love to know how they turn out! Happy Birthday to your daughter as well!
